Liquor made from fruit juice. It is characterized by a flavor unique to the fruit. There are two types of fruit liquor: traditional fruit liquor and fruit liquor made by steeping fruit in shochu. Fruit liquor is divided into authentic fruit liquor made by fermenting fruit juice and sweet fruit liquor. The former is made by adding sugar to fruit juice and fermenting it under certain restrictions (sugar content 26% or less) in consideration of the quality of the liquor and storage safety, since fruits in Japan generally have a low sugar content. Representative fruit liquors are wine and apple cider. Sweet fruit liquor is made by adding sugar to fruit juice beyond a certain limit or by adding sugar to alcohol, such as sweet wine (sweet wine or honey wine), which was called Japanese port wine. Fruit liquor, also known as fruit liqueur or home liqueur, has been made at home for a long time, as exemplified by plum liquor. Legally, plum liquor was first made in 1962 (Showa 37), and then in 1971 it became possible to make plum liquor at home using all fruits except grapes.
