Modified starch is a type of starch that has been modified using chemical or physical means or enzymes to improve the polymer properties and usable physical properties of natural starch. When starch is treated chemically or with enzymes, it is possible to obtain starch with greatly improved usable physical properties such as viscosity, glue transparency, adhesiveness, and glue stability. Modified starches include dextrin, oxidized starch, enzyme-treated starch, alpha starch, and starch derivatives (starch phosphate, carboxymethyl starch, crosslinked starch, cationic starch, etc.).

化学的･物理的手段あるいは酵素などを用いて，天然デンプンの高分子特性，利用物性を改良した処理デンプン。デンプンを化学的に，あるいは酵素を用いて処理すると，粘度，のりの透明度，接着性，のりの安定性などの利用物性が非常に改良されたものが得られる。化工デンプンの中にはデキストリン，酸化デンプン，酵素処理デンプン，αデンプン，デンプン誘導体(リン酸デンプン，カルボキシメチルデンプン，橋架けデンプン，陽性デンプン等)がある。
