Protective colloid

...This is thought to be due to specific adsorption to the particle interface; adding a small amount of it acts as a partial shield for the charge and a bridge between particles, but adding a large amount covers the particle surface and makes the particles hydrophilic. Those that exhibit a sensitizing effect are used as coagulants, and those that exhibit a protective effect are used as protective colloids. Gum arabic and gelatin have long been well-known as protective colloids, but recently carboxymethyl cellulose and polyvinyl alcohol have also been used.
