In sea turtles, birds, and mammals, the epithelium is highly keratinized, and small esophageal glands secrete mucus. Parts of the esophagus may expand to temporarily store food, forming a crop in birds. In pigeons and other animals, the tissue structure is specialized, and under the influence of prolactin, they secrete 'pouch milk' to provide nutrition for the chicks after hatching.
