…German biochemist. He studied at universities in Munich and Erlangen, and served as professor at universities in Berlin (1898), Wroclaw (1909), and Würzburg (1911). He was the first to confirm alcoholic fermentation in a cell-free extract of yeast (1897). This was an important turning point in overcoming Pasteur's view that fermentation was a physiological phenomenon of living cells. It is said that his discovery was led by the fact that a large amount of sugar had been added as a preservative in order to extract pharmacological substances from yeast. …
