Soba and udon vendors who roamed the streets at night. In the late Edo period, in the Kyoto-Osaka region they specialized in udon, while in Edo they mainly sold soba and also sold udon, but "yonaki udon" was the name used in the Kyoto-Osaka region, and in Edo they were called "yotaka soba" instead, because many of the night hawks who worked as street prostitutes ate it. In Edo, it was customary for night soba vendors to always hang wind chimes on their carrying carts, and there were some in the Kyoto-Osaka region who followed suit. Night soba vendors were familiar to the citizens, and were widely featured in plays and other productions, especially as an additional nighttime sight in autumn and winter. 夜間に街頭を流し歩くそば・うどん売。江戸末期に京坂地方ではうどん専門,江戸ではそばを主としうどんも兼ねたが,夜鳴きうどんは京坂地方の呼名で,江戸ではむしろ夜鷹そばと称し,街娼(がいしよう)の夜鷹が多くこれを食べるからと説明されていた。江戸の夜そば売は,担ぎ屋台にかならず風鈴をつるすならわしであり,京坂地方でもこれにならうものがあった。夜そば売は市民に親しい存在であり,とくに秋冬の夜の添景として,芝居その他のものにも広く取材された。
