Frijol (English spelling)
A Spanish term for beans originating from the New World, such as kidney beans and scarlet beans. It is also called frejol. Frijols have been used as an important source of protein since ancient times in the New World, where there are few large livestock, and are known to have been cultivated in the central highlands of Mexico as early as 4000 BC.
