The term refers to wasp larvae, but also refers to pupae and newly hatched young wasps. It has long been eaten in Nagano Prefecture and elsewhere, mainly Japanese hornets (giant wasps), but also giant hornets, honeybees, and paper wasps. They are fried in a frying pan and sprinkled with salt, or simmered in a sweet and spicy sauce. Mixing the simmered larvae with freshly cooked rice is called "bee larvae rice," and is considered the most delicious insect food in Shinshu, including the Ina region's Zazamushi (larvae of caddisflies and other insects). ハチの幼虫の意であるが,さなぎやかえりたての若バチをもいう。長野県などで昔から食用とされてきたもので,クロスズメバチ(ジバチ)を主とするが,オオスズメバチ,ミツバチ,アシナガバチなども用いられる。フライパンでからいりして塩をふったり,甘辛く煮つけて食べる。煮つけたものを炊きたての飯に混ぜるのが〈ハチの子飯〉で,伊那地方のザザムシ(トビケラなどの幼虫)などを含めた信州の昆虫食の中で最も美味とされる。ジバチ,ミツバチの子の缶詰があり,成分はタンパク質15.7g,脂質5.7g,糖質35.7g,鉄分6.7mg(いずれも100g中)などとなっている。
