Japanese: 麦芽糖 - ばくがとう

Its chemical formula is C ₁ ₂ H ₂ ₂ O ₁ ₁ . It is also known as maltose. It is a reducing disaccharide in which two glucose molecules form an α-1,4 bond. It is found in plant leaves, malt, honey, etc., and can also be obtained by hydrolyzing starch with amylase. When further hydrolyzed with maltase or acid, it becomes two glucose molecules. Its sweetness is about one-third that of sugar. It is an easily absorbed calorie source and is used as a sweetener and nutritional supplement.

化学式はC₁₂H₂₂O₁₁。マルトースとも。ブドウ糖が２分子α-1，４結合をした還元性二糖類。植物の葉，麦芽，蜂蜜(はちみつ)などに含まれ，またデンプンをアミラーゼで加水分解すると得られる。マルターゼや酸でさらに加水分解されれば２分子のブドウ糖になる。甘味は砂糖の1/3程度。吸収のよいカロリー源であり，甘味剤，栄養剤として用いる。
