A biennial plant of the Apiaceae family. Its origin is unclear, but it has been cultivated in Western Asia and the Mediterranean region since ancient times, and is now widely cultivated in temperate regions as a major root vegetable. The leaves, both basal and stem, are finely divided and hairy. In spring, it grows flower stalks 60 to 100 cm long and produces numerous spherical umbels. There are many varieties, and the color of the roots varies depending on the variety, from yellow to orange to red. The harvest season varies, and it is available all year round, but the peak season is from autumn to winter. It was introduced to Japan from China before the Edo period. Until relatively recently, Oriental varieties with long roots (some are over 70 cm long) were mainly cultivated, but in recent years, small to medium-sized Western varieties have come to be cultivated. The color of the roots is due to carotene, and it contains a high amount of vitamin A. The name carrot is sometimes used as an abbreviation of Korean ginseng, so it is sometimes called 'seri ninjin' to distinguish it from that. セリ科の二年草。原産地は明らかではないが,西アジアや地中海地方できわめて古くから栽培され,現在,温帯地方で主要な根菜として広く栽培される。葉は根出葉,茎葉ともに羽状に細かく分裂し毛がある。春,長さ 60~100cmの花茎を伸ばし,球状の多数の散形花序をつける。多くの品種があり,根の色も黄,橙,赤など品種によって異なる。収穫期もまちまちで1年中出回るが,秋から冬にかけてが最盛期である。日本には江戸時代より以前に中国から入った。その後,比較的最近まで東洋系の根の長大な品種 (長さ 70cmをこすものがある) が主として栽培されていたが,近年は小型,中型の欧米系の品種が多く栽培されるようになってきた。根の色はカロテンによるもので,ビタミンAの含有量が高い。ニンジンの名は,チョウセンニンジンの略称として使うこともあるので,それと区別するためセリニンジンなどと呼ばれることもある。
