Sugar Alcohol - Cane Alcohol

Also called glycitol or alditol. A general term for polyhydric alcohols obtained by reducing the carbonyl group of monosaccharides, and their homologues. Generally, the name is obtained by changing the ending -ose of the original sugar to -itol. It is widely distributed in the living world, especially the plant kingdom, in free or derivative form. Generally, it is easily soluble in water. It has a sweet taste. It has weak optical rotation, if any. It does not reduce Fehling's solution, and does not show mutarotation. When gently oxidized, it produces a mixture of the corresponding aldoses, ketoses, and aldonic acids, but when strongly oxidized, it gives sugar acids. In a broad sense, it also includes cyclic sugar alcohols (such as inositol and quercitol).

グリシトール，アルジトールともいう．単糖類のカルボニル基を還元すると得られる多価アルコール，およびその同族体の総称．一般に，もとの糖の語尾-oseを-itolにかえて命名する．生物界，とくに植物界に遊離状または誘導体の形で広く分布している．一般に水に易溶．甘味がある．旋光性はあっても弱い．フェーリング液を還元せず，変旋光を示さない．穏やかに酸化すれば相当するアルドース，ケトース，アルドン酸の混合物を生じるが，強く酸化すると糖酸を与える．なお，広義には，環式糖アルコール(イノシトールやクエルシトールなど)も含める．
