Cod roe (tarako) - Cod roe
The name means cod eggs, but usually refers to salted pollock ovaries. Raw ovaries are washed in salt water to remove any dirt, then salt is added and salted. Food coloring is often added to color them red, and they are also known as momijiko. Hakata's specialty karashi mentaiko fish roe is pickled in salt and chili peppers, and its name comes from the Korean name for pollock, mentai or mintai. All of the above can be eaten as is or grilled and used as fish for sake, as a side dish for rice, in salads, and in canapes.

タラの卵の意であるが,ふつうスケトウダラの卵巣を塩漬にしたものをいう。生の卵巣を食塩水で洗って汚れを除き,食塩を加えて塩蔵する。食用色素を加えて紅色に着色することも多く,紅葉子(もみじこ)の別称もある。博多名物の〈辛子明太魚子(からしめんたいこ)〉は塩とトウガラシで漬けこんだもので,スケトウダラを朝鮮でメンタイ,ミンタイと呼ぶところからの名である。以上,いずれもそのまま,あるいは焼いて酒のさかな,飯の菜,あえ物,カナッペなどに用いる。
