The name means cod eggs, but usually refers to salted pollock ovaries. Raw ovaries are washed in salt water to remove any dirt, then salt is added and salted. Food coloring is often added to color them red, and they are also known as momijiko. Hakata's specialty karashi mentaiko fish roe is pickled in salt and chili peppers, and its name comes from the Korean name for pollock, mentai or mintai. All of the above can be eaten as is or grilled and used as fish for sake, as a side dish for rice, in salads, and in canapes. Source: Heibonsha World Encyclopedia, 2nd Edition Information |
