Saita salt - Saitajio
This refers to salt produced at the Muya Salt Fields in Awa Province (Naruto City). Between 1599 and 1607 (Keicho 4-12), the Tokushima Domain developed a series of Irihama salt fields along the Muya coast, centered on Saiden. Development continued thereafter, and by 1644 (Shoho 1), 12 villages known as Saiden Salt Farmers were established. It was around the Genna period (1615-24) that salt produced in the Seto Inland Sea (downstream salt) began to flow into Edo, and at the time the main products were Awa Saiden salt, Banshu Arai salt, and Ako salt. At the end of the 18th century, the area of ​​the Muya salt fields was over 297 cho, and production was over 1.32 million bales (containing 2.5 sho), most of which was sold in Edo.

阿波国撫養(むや)塩田(鳴門市)で生産される塩をいう。1599‐1607年(慶長4‐12)の間に,斎田を中心とする撫養沿岸では,徳島藩によって次々と入浜塩田が開発された。その後も開発が進み,1644年(正保1)にはいわゆる斎田塩方12ヵ村が成立する。江戸へ瀬戸内産塩(下り塩)が流入しはじめるのは元和(1615‐24)ころで,当時は阿波斎田塩,播州荒井塩,同赤穂塩が主であった。18世紀末の撫養塩田の面積は297町余,生産高132万俵余(2斗5升入り)で,大部分が江戸売りである。
