A salted salmon product, lightly salted ones are now called shinmaki, but originally it referred to fish or meat salted and wrapped in straw for ease of storage and transportation. In the Wamyōshō, it is written as 苞苴 and read as aramaki, referring to wrapped fish meat. In addition to the sea bream aramaki that appears in the Uji Shūi Monogatari and other works, old documents mention eels, conger eels, octopuses, deer, whales, pheasants and other creatures, but no salmon aramaki has been found. サケの塩蔵品で,薄塩のものを現在この名で呼び新巻と書いているが,本来は貯蔵や運搬の便宜のため,魚や肉を塩蔵してわらなどで巻き包んだものをいった。《和名抄》では〈苞苴〉と書いて〈阿良万岐(あらまき)〉と読ませ,魚肉を包んだものとしている。《宇治拾遺物語》などに出てくるタイの荒巻のほか,古い文献にはウナギ,ハモ,タコ,シカ,クジラ,キジその他のものの名が見られるが,サケの荒巻は見られないようである。サケ【鈴木 晋一】
