This oil is extracted by pressing and then refined from rice bran (also called "ko-bran" or simply "bran"). It is also called bran oil. Rice bran contains the pericarp, seed coat, and aleurone layer, and usually makes up 6-7% of brown rice, but the yield and oil content vary depending on the degree of mashing. The rice germ contains 20-35% oil, while rice bran contains 7-22%. Rice bran contains lipase, an enzyme that hydrolyzes fats and oils, and its action easily produces free fatty acids during storage. This reaction is particularly accelerated when temperatures are high, humidity is high, or the product is poorly handled during collection, causing a deterioration in color.

玄米をついて精白するとき得られる米ぬか(〈こぬか〉または単に〈ぬか〉ともいう)から圧搾抽出法によって採油し，精製した油。ぬか油ともいう。米ぬかは果皮，種皮，糊粉層を含み，ふつう玄米の6～7％であるが，米をつく程度により収量および含油量などが増減する。米の胚の含油量20～35％，米ぬかの含油量は7～22％。米ぬかは油脂加水分解酵素リパーゼを含み，その作用により貯蔵中に遊離脂肪酸を生じやすく，とくに気温が高く，湿度が大きいときや集荷取扱いが悪いとこの反応が促進され，色も悪くなる。
