Kinkonzuke - Kinkonzuke
This food is made by hollowing out the core of a melon, stuffing it with daikon, carrots, burdock, shiso, etc., wrapped in kelp, and pickled in miso or moromi. It is said that the older it is, the tastier it becomes. It is a specialty of the Hanamaki region of Iwate Prefecture.
