… The understanding that enzymes are inseparable from the phenomenon of life itself gradually deepened, and the famous controversy over vitality between JF Liebig and L. Pasteur, and E. Büchner's achievement of alcoholic fermentation using cell-free extracts of yeast (1896) culminated in a deeper understanding that enzyme molecules are proteinaceous catalysts that carry out metabolism in living organisms, but conclusive evidence was not yet obtained. Meanwhile, Wilhelm Kühne (1837-1900) gave the name Enzym, derived from the Greek word meaning "something present in yeast" (1878). It was James Batcheller Sumner (1887-1955)'s successful crystallization of jack bean urease (1926) that conclusively demonstrated that enzymes are proteins. …
