Ganzuke - Ganzuke
" crab Crab A sound change of "tsuke" (pickled crab). Small crabs such as fiddler crabs are ground up with the shells on, salted and chilli peppers are added and the mixture is fermented. A local dish of Saga prefecture. Crab pickles. Gane pickles.
