Reconstituted milk - Kangengyuunyu

Japanese: 還元牛乳 - かんげんぎゅうにゅう

Skim milk powder is mixed with milk fat, butter, vitamins, etc. to give it the same composition as cow's milk. It was developed for long-term storage and long-distance transportation. Most milk, except for commercial milk which is made by diluting natural cow's milk, uses this method to enhance its concentration and nutritional value. It has become widespread for the purposes of adjusting the difference between the demand season and the production season, and reducing costs by using cheap imported skim milk powder. Note that unskimmed whole milk powder has drawbacks such as deterioration of the fat, so although it is sold commercially as fully preserved infant milk powder, the term "reconstituted milk" is not used.

脱脂粉乳に乳脂肪かバター，ビタミンなどを加えて，牛乳と同じような成分にしたもの。牛乳の長期保存，長距離輸送のため開発された。天然牛乳を薄めた市乳以外は，ほとんどの牛乳がこの方式を採用し，濃度，栄養価を強化している。需要シーズンと生産期のずれの調節，安価な輸入脱脂粉乳によるコスト引下げなどの目的で広く普及した。なお脱脂していない全粉乳は，脂肪の変質などの難点があるので，保存処置の完全な乳児用粉乳として市販されてはいるが，還元牛乳という語は用いない。
