Starches from rice, wheat, sweet potatoes, and other ingredients are saccharified with koji (malt) and fermented with yeast, and the resulting mash, or the sake lees left over after squeezing the mash, are distilled in a single still. This is the traditional shochu, and under the current Liquor Tax Act, shochu with an alcohol content of 45% or less is called shochu class B.
