...A distilled alcoholic beverage native to Japan. "Yaki" means to heat, and "chu" means to brew, i.e., a strong alcoholic beverage that has been remade. Starches from rice, wheat, sweet potatoes, and other ingredients are saccharified with koji (malt) and fermented with yeast, and the resulting mash, or the sake lees left over after squeezing the mash, are distilled in a single still. This is the traditional shochu, and under the current Liquor Tax Act, shochu with an alcohol content of 45% or less is called shochu class B. In contrast, shochu class A is a type of alcoholic beverage made from agricultural products such as molasses, which is fermented with alcohol, and high-purity alcohol is extracted using a continuous still, which is then diluted with water to reduce the alcohol content to 36% or less.
