Cashew - Cashew

A perennial vine in the Dioscoreaceae family (APG classification: Dioscoreaceae). A cultivated variety of bitter yam. Native to China, it is cultivated in tropical Asia. Only female plants were introduced to Japan and are cultivated there, but as there are no male plants, they do not bear fruit even after flowering. The tubers grow underground, with a dark brown surface and a yellowish-white interior, and many fibrous roots. Large bulbils measuring about 2 cm in diameter grow in the leaf axils. Both the tubers and bulbils can be cut into small pieces and eaten boiled, simmered, or steamed, giving them a chestnut-like flavor.

ヤマノイモ科(APG分類:ヤマノイモ科)の多年生つる草。ニガカシュウの栽培品種。中国原産で、熱帯アジアに栽培される。日本には雌株だけが伝来して栽培されているが、雄株がないので開花しても結実しない。地下にいもができ、表面は暗褐色で内部は黄白色、多くのひげ根がある。葉腋(ようえき)に径約2センチメートルの大形のむかごをつける。いももむかごも細かく切り、ゆでたり煮たり蒸し焼きにしたりして食べ、クリのような味になる。
