Kais - Kaizu

Japanese: カイズ - かいず

It is the local name for juvenile black porgy of the Sparidae family of the Osteichthyes order, up to about 20 centimeters in length. It is the name used mainly in the Kanto region and Wakayama. In the Kanto region, small ones of a few centimeters are called chinchin, and slightly larger ones are called chinchinkaizu. In the Kansai region, black porgy is called chinu. It does not have as much umami as the adult fish, but it is used as sashimi and in ushiojiru (seaweed soup).

硬骨魚綱スズキ目タイ科のクロダイの体長20センチメートルぐらいまでの幼魚の地方名。主として関東、和歌山での呼び名である。関東では、数センチメートルの小形のものはチンチン、もうすこし大きいものをチンチンカイズということもある。関西では、クロダイをチヌという。成魚ほどのうま味はないが、刺身、潮汁(うしおじる)にされる。
