...The latter is represented by nigiri sushi, a rice dish unique to Japan. Sushi is written as 鮓, 鮨, 寿司, 寿志, 寿司し, etc., but all except 鮓 and 寿司 are phonetic characters that came into use after the mid-Edo period, and "sumoji" and "osumoji" are women's words that have been used since the Muromachi period. Both 鮓 and 鮨 are old kanji, and the representative sounds are 鮓 (sa) and 鮨 (shi).
