Evaporated milk
Also called unsweetened condensed milk. Milk or skim milk is evaporated in a vacuum to about half or 2.5 times its original size without adding sugar. It contains small amounts of sodium phosphate and sodium citrate as stabilizers. The raw milk is carefully selected, and it is sterilized in a rotary sterilizer at over 100°C, so it has the longest shelf life of all condensed milks unless the can is opened.

無糖練乳ともいう。牛乳,脱脂乳を砂糖を入れずに真空で約2分の1ないし 2.5分の1に蒸発濃縮したもの。安定剤としてリン酸ソーダ,クエン酸ソーダなどが微量入っている。原料乳を厳選してあるうえ,回転式滅菌器に入れて 100℃以上で滅菌してあるので開缶しないかぎり練乳のなかでは最も保存力が強い。
