...In Japan, frozen food production was just 5,000 tons in 1960, but increased to 1.4 million tons by 1995.
[Production method]
There are three methods for freezing food: air freezing, air blast freezing, contact freezing, and liquid nitrogen freezing. The air freezing method involves placing food in a low-temperature room at -20 to -25°C and freezing it. It is simple in structure and inexpensive, but it takes a long time to freeze and is prone to quality deterioration.
