First-class sake - Ikkyushu

...A type of sake unique to Japan, brewed primarily from rice, rice malt, and water. Since the Meiji period, when various imported alcoholic beverages began to be produced domestically, it has generally come to be called Japanese sake.
[history]
The Harima no Kuni Fudoki records a legend of brewing sake using moldy dried rice, suggesting that koji was already being used in sake brewing in Japan at the beginning of the 8th century. Since ancient times, three shrines have been worshipped as gods of sake brewing: Omiwa Shrine in Sakurai City, Nara Prefecture, and Umenomiya Taisha and Matsuo Taisha in Kyoto City.
