Gelatin is added to meat juice to create a jelly-like consistency. It is used in cold dishes. The word originates from the Greek word aspis, which originally meant meat jelly. It is often called aspic jelly. It is made by adding gelatin to clear meat juice, consommé, bouillon, etc. to create an aspic jelly liquid, which is then cooled and solidified. It has many uses.

(1) It is used to pour aspic jelly over vegetable dishes, egg dishes, fish dishes, meat dishes, etc., and to cool and solidify them.

(2) Aspic jelly is used as a garnish, cut into cubes or shreds, on top of or alongside meat dishes, or as a pour over gelatinized white sauces and other sauces to set them and to give sauces a glossy finish.

(3) After seasoning the dish, a gelatinous sauce is poured over it and it is cooled and solidified, and the surface is decorated with floral patterns and other designs, and then aspic jelly is poured over it to give it a glossy finish. It is used for parties and for cooking for guests, and has a wide range of applications.

肉汁にゼラチンを入れ、ゼリー状にしたもの。冷製料理に用いられる。語源はギリシア語のaspisで、本来の意味は肉ゼリーである。多くはアスピックゼリーと称している。作り方は、透明な肉汁、コンソメ、ブイヨンなどにゼラチンを入れ、アスピックゼリー液をつくり、冷やし固める。用途はいろいろある。

(1)野菜料理、卵料理、魚料理、肉料理などに、アスピックゼリーをかけ、冷やし固めるために用いられる。

(2)堅めのアスピックゼリーをそのまま角切り、せん切りなどにして、肉料理の上やわきに飾りとして置く。またゼラチン入り白ソース、そのほかのソースを料理にかけて固め、ソースに光沢を出すためにも使用される。

(3)料理に味つけしたのち、ゼラチン入りソースをかけて冷やし固め、この表面に、花模様などのデコレーションをして、さらにその上にアスピックゼリーをかけて光沢を出す。パーティーや来客料理に利用され、応用面は広い。
