...It is often used in beef stew and other stewed meat and vegetable dishes. Add mirepoix (a mixture of aromatic vegetables, bacon, and spices caramelized), brown stock, and tomato puree to a brown roux, reduce it, and strain it. Add an equal amount of stock to this, reduce it to half the total amount, and add Madeira wine or other flavoring to make sauce demi-glace.
