In the center, where intermarriage and Christianization are prominent, European music is performed in its original form, and while retaining Spanish influences, new Philippine music and dance styles have been created. For example, the ensemble form known as "rondalla" supports gatherings where familiar melodies are sung in unison, parallel thirds, or part chorus, accompanied by guitar, mandolin, and fretted bass, and where people dress up in ballroom-style dance-like costumes and dance with patterned steps. In addition, Malay traditions such as the "candle dance" (where candles are placed on plates in the hands or on the head) and the "tingkling" bamboo dance (where long bamboo poles are beaten rhythmically, and the dancers dance acrobatic with regular steps to avoid getting their feet caught) have been arranged in a Western style and passed down.

...But within that range, the rhythm is detailed and subtle. The ensemble that plays the jota, called the rondalla, is made up of the bandurria, the laúd (both of which are stringed instruments with a plectrum similar to a flat mandolin), and a guitar, and the male and female dancers in traditional costumes use castanets. Another characteristic of the dance is that the male dancers jump high in the air.
