This refers to foods that contain more alkaline-forming minerals such as potassium, calcium, magnesium, and sodium than acid-forming minerals such as phosphorus, sulfur, and chlorine. In contrast, foods that contain a lot of acid-forming minerals are called acidic foods. The measurement method is to burn a certain amount of food, dissolve the ash obtained in water, and measure the amount of acid needed to neutralize it, or to perform elemental analysis of the ash and calculate from the difference in milligram equivalents of the two groups of elements. Generally, vegetables, fruits, seaweed, mushrooms, and potatoes that are high in potassium and calcium fall into this category. Alkaline foods are said to be good for your health because body fluids are maintained at a hydrogen ion concentration index (pH) of 7.4, but the body's functions are always maintained at a constant alkalinity, so they are not affected by the foods you ingest.
