In 1874, the Englishman William Curtis produced ham and bacon in Kanagawa Prefecture while working in the hotel business, and a Japanese man who learned the method from Curtis produced what is now known as Kamakura Ham in 1886. However, it was only after World War II that processed meat products became part of the diet of ordinary people, and the demand for processed meat products increased with the rapid economic growth and westernization of dietary habits. …

…In 1874, William Curtis, an Englishman, began processing ham in Kawakami Village, Kamakura County, Kanagawa Prefecture (now Totsuka, Yokohama City), and this spread to the Japanese. One of them, Saito Manpei, received permission to start a business in 1887 and officially began manufacturing ham. This is the origin of what is known as Kamakura ham, and is known as the birthplace of ham manufacturing. After World War I, German-style processing techniques were introduced to Japan by several German prisoners of war who worked as processing technicians. …
