Kashiwa

Another name for chicken. Originally, chickens with yellowish-brown feathers that were introduced from China were written as yellow chickens and called "kashiwa." Since they were mainly raised in the Kansai region, kashiwa was also used as a general name for chicken meat there, and in some areas the high-quality chicken meat was called "kashiwa."

鶏肉(けいにく)の別名。もとは、中国渡来の、羽毛が黄褐色のニワトリを黄鶏と書き、「かしわ」とよんでいた。主として関西で多く飼育されていたところから、関西では鶏肉の一般名称としてもかしわが用いられ、またニワトリの上等肉を「かしわ」とよんだ地域もある。
