…The story of Yi Ya, who was the chef of Duke Huan of Qi during the Spring and Autumn Period and was a seasoning genius, can be found in many historical sources, including the Zuo Zhuan. According to the Guanzi, when Duke Huan said he had never tasted steamed infants, Yi Ya steamed his first-born son and served it to the Duke. Some criticize him for not being worthy of being called a chef, but he is praised as one of the masters of cooking, as can be seen from the famous cookbook Yi Ya Yiyi published during the Wanli period of the Ming Dynasty (1573-1619). In China, chefs as a profession can be broadly divided into private chefs and official chefs of the imperial court and government offices. …

…春秋時代の斉の桓公（かんこう）の料理人で，調味の天才であった易牙に関する話柄は，《左氏伝》をはじめ幾つもの史料にみえるが，《管子》小称によれば，桓公が嬰児（えいじ）を蒸したものはまだ味わったことがないといったところ，易牙は自分の長子を蒸して公の膳にすすめたという。このため料理人の風上にも置けぬとの批判もあるが，明代の万暦年間(1573‐1619)に《易牙遺意》という有名な料理書がでていることからもわかるように，料理人の祖師の一人として称揚されている。　中国における職業としての料理人は，大きくいって民間の民厨と宮廷･官衙（かんが）の官厨にわかれるであろう。…
