...The word surume first appeared in the mid-Muromachi period, and there are theories about its origin, such as that it is an abbreviation of "sumimure (black ink group)." In the Edo period, it was an important export to China, and the names "Ichiban surume" and "Niban surume," which were used at the time to indicate the grade, are still used today. Ichiban surume is a high-quality product made from swordtip squid, and is mainly produced in Kyushu prefectures and Yamaguchi prefecture, as it is also called Goto surume.
