…There are rules for how to eat pheasant, and seven or eight historical and cooking books, including the Imagawa Daisoshi, feature articles on how pheasants eat birds, and some even describe how the host and guest should greet each other on the occasion. The Cooking Story, written in the early Edo period, lists pheasant dishes as Aogachi, Yamakage, hisio-iri, namasu, sashimi, senba, kokusho, habushi sake, tsukami sake, whole roast, and skewered. Aogachi is a soup made by beating the intestines and adding miso, then putting the pot on the fire and roasting it, then thinning it with dashi, adding meat, and seasoning it with salt. Yamakage and hisio-iri are both soups made with freshly made miso, but with different flavors of miso. …
