The Cooking Story, written in the early Edo period, lists pheasant dishes as Aogachi, Yamakage, hisio-iri, namasu, sashimi, senba, kokusho, habushi sake, tsukami sake, whole roast, and skewered. Aogachi is a soup made by beating the intestines and adding miso, then putting the pot on the fire and roasting it, then thinning it with dashi, adding meat, and seasoning it with salt.
