Aitake - Aitake

An edible mushroom of the family Russulares, Basidiomycetes. The cap is about 10cm in diameter, neat, inelastic, and brittle. The surface is dull green with fine cracks. The gills and stem are white, and the flesh is not spicy. It grows above ground in woods from summer to autumn. It is distributed worldwide and is widely edible. It also has the local name Aohatsu. "Hatsu" is a name commonly used for mushrooms of the family Russulares. There are also some regions (such as Tottori Prefecture) where the name Aitake refers to Hatsutake.

Japanese:

担子菌類、マツタケ目ベニタケ科の食用キノコ。傘は径10センチメートル内外、形は端正で弾力がなく、もろい。表面はくすんだ緑色で、細かくひび割れする。ひだも茎も白色で、肉は辛味がない。夏から秋にかけて雑木林の地上に生える。世界的に分布し、広く食用にされる。アオハツという地方名もある。「ハツ」はベニタケ科のキノコに広く使われる名である。また、アイタケの名でハツタケをさす地方(鳥取県など)もある。
