The staple food is usually a flat tortilla made from corn flour, which can be eaten as is or with ingredients rolled up inside, known as tacos. It can also be deep-fried and topped with meat and vegetables in the style of an open sandwich.

Tortillas are thin, round, semi-dried rice crackers that are lightly toasted on both sides, torn into pieces, and eaten with chili juice. They are also used as a plate to wrap meat, vegetables, and other ingredients in a typical Mesoamerican dish called tacos. The distinctive feature of the Andean use of corn is that it is consumed more as an ingredient in the liquor commonly known as chicha than as a daily food.
