A type of sugar, produced by isomerizing a portion of glucose into fructose using enzymes. The raw material is glucose liquid, which is the result of hydrolysis of starch, or the hydrolysis liquid of sugar liquid, which is treated with an isomerizing enzyme (isomerase) to increase the fructose content. Fructose is sweeter and has better quality than glucose or sugar. This allows for the production of sugars that are sweeter and tastier. In addition, the higher sweetness allows for the amount of sugar used to be reduced. Depending on the degree of isomerization from glucose to fructose, various types of isomerized liquid sugar, such as glucose-fructose liquid sugar and fructose-glucose liquid sugar, are produced, and are standardized by the Japanese Agricultural Standards (JAS).
