...One theory is that the Korean monk Genchin, who came to Todaiji Temple in Nara during the Kan'ei period (1624-44), taught the use of wheat flour, but there are no historical documents to support this, and wheat flour was probably first used as a binder at the earliest after the end of the Genroku period (1688-1704).
