Fully polished rice - Kanzenseimai

...refers to brown rice from which the bran layer and germ have been removed. The bran layer accounts for 5-6% of brown rice tissue by weight, and the germ for 2-3%. The polishing yield of polished rice (also called fully polished rice) in which the bran layer and germ have been thoroughly removed using a rice polishing machine is usually 91-92%. In contrast, rice that has been polished less and has had about 50% of the bran layer and germ removed is called half-polished rice, and rice that has had about 70% removed is called seven-tenths-polished rice, which have polishing yields of 96% and 94%, respectively, but these are rarely used these days, and the rice generally sold commercially is fully polished rice in which the bran layer and germ have been thoroughly removed.
