...In the early Edo period, the candy from Kikuichimonjiya in front of Tofukuji Temple in Kyoto, Katsura Ame from Katsura Village, and Hirano Ame from Osaka were famous, and in Edo they were called "Kudari Ame" or "Kagari Gyosen" and highly valued. Solid candy is made by kneading starch syrup to reduce the water content, and white candy is made by two people pulling it together to make it white with air bubbles. Sankan Ame, a specialty of Edo and Kokura in Buzen, and Chitose Ame, which is now an indispensable item at the Shichigosan celebration, are also white candy, and Ryutei Tanehiko writes that the latter was sold by a man named Shichibei in Asakusa, Edo, around the Genroku and Hoei eras (1688-1711). ...

…江戸初期，京都では東福寺門前の菊一文字屋のものや桂の里の桂あめ，大坂では平野あめなどが有名で，これらは江戸で〈下（くだ）りあめ〉〈下りぎょうせん〉と呼んで珍重された。　水あめを練って水分をへらしたのが固あめ，これを人がふたりで引き合って気泡を含ませて白くしたのが白あめである。江戸や豊前小倉で名物とされた三官あめ，いまは七五三の祝いのつき物となった千歳あめも白あめで，後者は元禄･宝永(1688‐1711)ごろ江戸浅草の七兵衛なる者が売り歩いたと柳亭種彦は書いている。…
