…The word “tataki” comes from the fact that both the meat and the innards are pounded with a knife to make the shiokara. Other than squid, bonito, and the aforementioned konowata and mefun, other important fish include sweetfish uruka and sea urchin (uni) made from sea urchin ovaries, and although these are not mentioned in literature, they must have been made like other shiokara since ancient times. The word shiokara appears in the Konjaku Monogatarishu, but it was not used much even after the Middle Ages, and it was often called “nashimono” or “natsushimono.” …
