[Ethyl vanillin]
A compound was synthesized in which the -OCH ₃ group in the vanillin molecule was replaced with an -OC ₂ H ₅ group, and it was found to have a similar odor to vanillin but with a stronger intensity. This is called ethyl vanillin, or bourbonal.
