Generally, dried goods refer to vegetable foods that have been dried to increase their shelf life, and are to be distinguished from dried fish, but it was only in the modern era that dried goods stores dealing in all kinds of dried foods were established. In the mid-modern period, suppliers of goods included salt wholesalers, dried fish wholesalers, bonito flakes wholesalers, and miscellaneous grain wholesalers, while in the later period somen noodle wholesalers appeared, and then dried goods wholesalers dealing in other dried goods appeared. 乾物類を販売する小売商人,およびその店。一般に乾物といえば植物性食品を乾燥させて保存性を高めたものをさし,魚類の乾燥品である干物と区別するが,こうした乾燥食品全般を扱う乾物屋が成立したのは近代に入ってからである。商品の仕入先は,近世中期では塩問屋,干魚問屋,鰹節問屋,雑穀問屋があり,後期にはそうめん問屋ができ,さらにそれ以外の乾物を扱う乾物問屋があらわれた。乾物屋も最初は商品別に成立したようである。
