Rice is suited to humid soil, while wheat is suited to dry soil. We discussed the issue of humidity and dryness in the Agriculture section. In intertillage agriculture, which developed in regions with relatively humid summers, rice is grown as a summer crop and wheat as a winter crop (twice a year, double cropping), while in fallow agriculture, which developed in regions with relatively dry summers, wheat is grown exclusively (single cropping). In the mountainous regions of Southwest Asia, where wheat cultivation first took place, wheat cultivation is still practiced today in the two-field format.
