Akitabuki - Akitabuki

A perennial plant of the Asteraceae family (APG classification: Asteraceae), a variety of butterbur. It is large, with a petiole that can reach 2 meters in length and a leaf blade that can reach 1.5 meters in diameter. It grows wild in Hokkaido, the Tohoku region, Karafuto (Sakhalin), and the Kuril Islands. When moved to warmer climates, it becomes small and difficult to distinguish from butterbur. It is mainly cultivated in Akita Prefecture, where the petioles are mainly preserved in sugar and used as an ingredient in sweets. The "Aichi Wase" butterbur cultivated in western Japan is said to be a variety selected from Akitabuki.

キク科（APG分類：キク科）の多年草でフキの変種。大形で、葉柄の長さ2メートル、葉身の直径は1.5メートルにもなる。北海道、東北地方および樺太(からふと)（サハリン）、千島に自生する。暖地に移すと小形となり、フキとの区別はむずかしい。秋田県を中心に栽培され、おもに葉柄を砂糖漬けにして菓子の材料とする。西日本で栽培されるフキの「愛知早生(わせ)」は、アキタブキから選抜された品種といわれる。
