Japanese: おけさ柿 - おけさがき

A regional brand of the Hokuriku, Koshinetsu region, Niigata prefecture.
They are mainly produced in Sado City and Niigata City. Niigata has a long history of persimmon production, which is said to have begun in 1603 (Keicho 8) during the early Edo period in the Hamochi district of Sado City. Today, they are familiarly known as Okesa persimmons, and the main varieties are Hiratanenashi and Tone Wase. Although they are astringent persimmons, they are shipped from mid-October to early November after the astringency is removed using carbon dioxide and alcohol. They are also called Hachijin persimmons.

北陸甲信越地方、新潟県の地域ブランド。
主に佐渡市・新潟市で生産されている。新潟の柿生産の歴史は古く、江戸時代初期の1603(慶長8)年、佐渡市羽茂地区で始まったという。現在、おけさ柿の名で親しまれているが、その主な品種は平核無と刀根早生。渋柿であるが、炭酸ガスやアルコールを用いて渋抜きをしてから、10月中旬から11月上旬にかけて出荷される。八珍柿とも呼ばれる。
